Sensitising substances are substances which cause the immune system to overreact to them. Allergens are the most widely recognised sensitising substances, and cause fully fledged allergic reactions in predisposed people (gluten, nuts, egg, crustaceans, etc.) The increase in intolerance to lactose, gluten and various other food processing ingredients, in both adults and children, has prompted Pegaso to exclude the use of such ingredients in its own products, so as to make them suitable for everyone. Our line of lactic cultures uses strains of bacteria grown in maltodextrin, potato starch and maize starch media so as to keep them lactose-free and gluten-free.
